PROCEDURE:

1. In main kettle mix Sequence 1 to form a vortex, add Veegum Ultra, mix for 15 minutes.
2. Premix Xanthan Gum with Liponic EG-1 (Sequence 2). Add slurry to main vessel. Continue mixing at room temperature for 15 minutes.
3. Heat to 70-75°C with medium speed.
4. In a separate vessel combine Sequence 3, heat to 70-75°C.
5. Slowly add Sequence 3 to kettle, continue mixing until a uniform emulsion is formed, scraping sides often.
6. Homogenize batch at 65 - 70°C, return to propeller mixing, and continue cooling.
7. Add Sequence 4 at 45°C, adjust the pH 3.8 - 4.2 continue mixing.
8. When batch cools to 40°C, stop mixing. Batch sets up overnight and will thicken.

pH: 4.1 +/- .2
Viscosity: RVT/TD @ 3 rpm = 27,000 cps ± 10%
Stability: 1 Month at 50°C
