Fucoidans are long chain polysaccharides that are produced in the cell walls of brown macroalgae, or seaweed.

Serving to protect the seaweed from a range of external stresses, including water borne pathogens and UV exposure, fucoidans form an important part of the defence arsenal of brown seaweed.
