Nutraceuticals is a broad umbrella term that is used to describe any product derived from food sources with extra health benefits in addition to the basic nutritional value found in foods.

Antioxidants are compounds that can delay the oxidation of organic molecules by the inhibition of oxidising chain reactions.

Conventionally employed biologically-safe antioxidants include vitamin C, carnosine, glutathione and resveratrol.

Carnosine is a natural dipeptide that is innate to vertebrates and found to act as a pH buffer, iron-chelating agent and in lipid peroxidation.

Proteins may also have antioxidative activities against free radical oxidation of lipids and fatty acids, and certain peptides can react with free radicals to terminate the radical chain reaction.

Enzymes such as superoxide dismutase (SOD), catalase and glutathione peroxidase also play a key role in cellular defence against oxidative stresses.
